Best in Wichita Metro Burger Challenge 2022: How does Mulligan's Pub rate?

I've been traveling around the Wichita Metro, sampling the burger offerings from any joint that has burgers on the menu, local, regional, national chain, it doesn't matter. In order to determine a true champion of burgers in the metro, I'm on a mission to sample them all in the name of "burger science" (cough). For the burger criteria, click here.
Today's burger travels took me to Mulligan's Pub in the Northeast section of town. Touting "Food & Fun 7 Days a Week," Mulligan's has daily drink specials, Karaoke on Saturdays and 1/2 price pizza on Mondays and Fridays.
I entered the place at opening time, 11am for my first meal of the day. I was given a cheery "Good Morning!" by Belle (great name), who was busy prepping a few things at the bar - 1/2 price drinks on Thursdays. I took a seat at the bar, Belle took my drink order and provided me a menu. Mulligan's is another one of those places that embraces the building of your own burger. I built my bacon cheeseburger with American cheese as well as lettuce, tomato, onion, pickle and mayo. For my side I stayed traditional with regular french fries.
After slugging down 1/2 a 22 ounce frosty mug of Warbeard Irish Red Ale, my burger arrived. It had a nice visual and something I haven't seen yet on this challenge, the burger was served on a Ciabatta roll. I know a few fast food and fast casual joints have flirted with it, but it's usually a temporary marketing "Limited Time Only" kind of thing. After taking a few pics, I took that first bite. The beef was fantastic, the best seasoned patty so far in this challenge, it was cooked well, juicy, tender. The bacon was cooked a tad over and unfortunately applied using the dreaded "X" method. The veggies were fresh, I appreciate the large leaf application of lettuce to ensure coverage and green in every bite. The Ciabatta roll is an interesting choice for a bun. An Italian bread and a popular choice in making Panini sandwiches, the Ciabatta exterior has a slightly crackly, crisp crust. The interior of the bread holds up well to the moisture of sandwich ingredients, in this case burger ingredients, absorbing the juices. It's not a traditional soft hamburger bun bite, some folks might not like such a break from typical, I thought it was a nice twist. Their online menu states the burgers are served on a pretzel roll, so I don't know, maybe it was an "out of pretzel rolls substitution," but it was a good substitution, adding to an enjoyable burger experience. If it's now a standard serve, I say good call. It certainly separates Mulligan's Pub over the competition.
Side Note: The straight cut french fries were really good. They passed the slightly crunchy exterior and fluffy spud interior test with flying colors and were seasoned well. If you haven't seen me state it before, the mark of a properly fried and seasoned fry is not really needing a condiment to dip it in to enjoy it. Mulligan's makes a good french fry.
Costing me $12.84 after tax for the burger and side, The Mulligan's Build Your Own Burger Bacon Cheeseburger scored 57 points out of a possible 63, earning 5 out of 5 Bachelor on the Cheap stars. Reasonably priced, this is a build your own burger that I would order again.
Located at 8343 E 32nd St N, Wichita, KS 67226 the service at Mulligan's Pub was very good. Belle was friendly and attentive. She was a busy lady, either serving customers (the place was starting to get busy when I left at about 11:45am) or getting ready for the pending half priced drinks on Thursday crowd.
